Avocado Milk Chocolate Mousse Tartlets

A decadently rich and irresistibly creamy avocado chocolate mousse on a oat-nut-date base that is not only delicious, also very healthy. The secret ingredient for the mousse is the heart-healthy avocado which has a creamy nutty flavour that works well with chocolate. If you have a milk allergy, substitute milk chocolate with dark one.



CrustFilling

  • 3 tbsp Orange juice
  • 50 g Oat flakes
  • 80 g Dried dates
  • 50 g Almonds
  • 2 tsp Cocoa powder

  • 2 Ripe avocados, pitted and peeled
  • 100 g Milk chocolate, cut into smaller pieces
  • 1-2 tbsp Coconut oil, melted
  • 1 tsp Lime juice
  • 1 tbsp Maple syrup
  • 1 tsp Vanilla extract
  • Pinch of ses salt


  1. Mix 2 tablespoons of orange juice with oats. Quarter the dried dates. Pulse dates and almonds in a food processor until they turn into crumbs. Add in 1 tablespoon of orange juice. Mix the almond-date-mixture with oats and cocoa powder. Press into three 12-cm tartlet moulds and put in the fridge.
  2. Place the chopped chocolate in a small bowl. Place over a small saucepan of barely simmering water. Stir until the chocolate is melted and smooth, about 3 minutes. Set aside to cool slightly.
  3. Using a food processor, blend the melted milk chocolate, melted coconut oil, avocados, lime juice, maple syrup, vanilla, and salt until smooth and creamy, scraping the sides of the bowl as needed.
  4. Divide the mousse into tartlet cases and refrigerate for at least 4 hours or overnight. Grate some milk chocolate over and arrange some avocado slices or fresh berries atop.

Gluten Free Chocolate Tofu Tartlets with Cherry Compote

You are going to love these healthy and delicious tarlets made with a gluten-free buckwheat pastry shell filled chocolate-tofu mixture instead of usual eggs and dairy, then served with a luscious cherry compote. The chocolate tofu filling can also be used for other desserts and sweet treats. It is simple to make at home, and you can add other flavours for different twists on the basic recipe.



Buckwheat CrustChocolate Tofu FillingCherry Compote

  • 200 g Buckwheat flour
  • 50 g Sunflower seeds, finely ground
  • 1 tbsp Psyllium husks
  • 1/3 tsp Sea salt
  • 110 g Cold butter, cut into smaller pieces
  • 2 tbsp Iced cold water

  • 330 g Silken tofu
  • 2 tbsp Honey
  • 1 tsp Vanilla extract
  • 200 g 70% Dark chocolate, cut into smaller chunks

  • 180 ml Cherry juice
  • 1 tsp Cinnamon powder
  • 30 g Sugar
  • 250 g Pitted fresh (or frozen, thawed) cherries
  • 2 tsp Cornstarch

  1. Preheat oven to 200C/ 400F. Have ready four 10-cm tartlet pans or a 24-cm tart pan with removable bottom.
  2. Combine the buckwheat flour, finely ground sunflower seeds, psyllium husks, and salt in a large bowl. Rub in the cold butter with your fingers. Then, add in water, still mixing with your fingers, until the mixture forms a ball.
  3. Wrap dough with the waxed paper and chill for at least one hour or until firm before rolling. Remove the dough from the fridge and cut it into 4 pieces. Press the dough evenly into the prepared pans and prick the bottoms with a fork. Line each tartlet pan with parchment paper or aluminum foil and fill with pie weights or dried beans. Bake the tart shells for 10-12 minutes or until the edges begin to brown. Remove the pie weights or beans and return to the oven to bake for 5 minutes more, or until the crust is golden brown. Let the shells cool completely before filling and serving.
  4. In a blender, mix the silken tofu with vanilla and honey until smooth. Place chocolate chunks in a saucepan on low heat and melt just until smooth. Pour melted chocolate into the blender and continue blending until the mixture is completely smooth. Divide the filling into the prepared tartlet shells and chill at least 2 hours until firm.
  5. Mix the cornstarch and 1 tbsp cherry juice in a small bowl, set aside. Add the rest of cherry juice, cinnamon powder, sugar and cherries in a medium saucepan. Bring the mixture to a boil.
    Reduce heat to medium-low. Simmer until cherries are softened and start to release juices, about 10 minutes. Once the compote has cooked, add the cornstarch mixture a bit at a time while stirring. Let the mixture simmer for a minute. Pour into a bowl and let cool before using.

Blueberry Chocolate Tartlets

A generous portion of fresh blueberries and a good splash of black currant liqueur make these chocolate tartlets irresistible--serve dusted with cocoa powder or icing sugar. I have played with crust both with a buttery rich pastry and an unbaked healthy energy bar mixture. They were both very delicious!



CrustFilling

  • 250 g Fresh blueberries
  • 1 Vanilla bean
  • 200 ml Soya cream or whipping cream
  • 250 g 50% Bittersweet chocolate, roughly chopped
  • 100 g 85% Dark chocolate, roughly chopped
  • 40 g Coconut oil or butter, at room temperature
  • 2 tbsp Black currant liqueur or rum
  • 1 tbsp Blueberry syrup or honey


  1. Press the prepared crust mixture into the base and sides of the four 12-cm tartlet moulds with removable bottom or one 28-cm. Cover with plastic film and chill until ready for use.
  2. Blend the fresh blueberries in your mixer until smooth. Cut the vanilla bean in half lengthwise and scrape out the seeds.
  3. Chop chocolates into smaller even chunks and add into a large bowl. Place blueberry puree, soya cream, vanilla seeds and bean in a saucepan over a medium heat. Bring it to a simmer. Pour the hot blueberry-soya mixture over the chopped chocolate and let it sit for one minute. Stir until the chocolate has completely melted and smooth.
  4. Now add in coconut oil, black currant liqueur and blueberry syrup. Stir until well combined and smooth. Pour the berry-chocolate mixture into the prepared tartlet crusts and chill at least 4 hours or overnight.

Apple, Ginger and Treacle Tart

Treacle tart, a classic English dessert, is sweet, comforting and moreish. It is made using shortcrust pastry, with a decadent filling made of golden syrup, also known as light treacle, breadcrumbs, and lemon juice. The tart is normally served hot or warm with fresh cream or custard. The use of lemon and apple cuts through the sweetness and turns this into an unforgettable treat.

The word treacle refers to all forms of syrups made during sugar refining, from golden syrup through to black molasses. I have used walnuts to replace half of the breadcrumbs and added 2 tablespoons of crystallized ginger for a nutty and spicy filling.


Apple, Ginger and Treacle Tart

CrustFilling

  • 150 g Wholegrain spelt flour
  • 100 g Walnuts, ground
  • 40 g Icing sugar, sifted
  • 1/3 tsp Salt
  • 120 g Butter, cut into small pieces and slightly softened
  • 1 Egg

  • 100 g Buckwheat bread
  • 100 g Walnuts, ground
  • 2 tbsp Crystallized ginger, finely chopped
  • 50 g Raw sugar
  • 350g Homemade invert sugar syrup or golden syrup
  • 100 g Butter
  • 50 g Palm sugar
  • 1 tbsp Lemon juice
  • 2 tbsp Coconut cream
  • 1 tbsp Homemade vanilla extract
  • 1/2 tsp Nutmeg
  • 2-3 Pink lady apples, peeled and cut into wedges
  • 2 tbsp Almonds, chopped, optional


  1. To make the pastry, mix the spelt flour, ground walnut, icing sugar, salt and butter to a crumb-like consistency. Add the egg and, if necessary, a tiny drop of water to bring the dough together. Shape dough into a disc, wrap in clingfilm and refrigerate for an hour.
  2. Heat the oven to 190C/375F. Roll out the dough thinly on a lightly floured surface and line the base and sides of a 28 cm/11 inch tart tin. Trim the excess, line with baking parchment and dried beans, and bake for 15 minutes until starting to colour. Carefully remove the paper and beans, then bake for a further 10 minutes until pastry is golden. Cool.
  3. In a food processor, blend together the buckwheat bread, walnuts, chopped crystallized ginger and raw sugar until fine breadcrumbs form. Set aside.
  4. Place invert sugar syrup, butter, palm sugar, lemon juice, coconut cream, vanilla extract and nutmeg in a small saucepan and stir over medium heat until the mixture bubbles and well-blended. Whisk in prepared breadcrumbs until combined. Pour into tart shell.
  5. Quarter apples, core and cut each into 2-3 wedges. Starting at the edge of the tart, arrange apple wedges in concentric circles. Scatter the chopped almonds over if using.Bake for 35 minutes or until firm to the touch. Cool for 15 minutes. Serve warm or at room temperature dusted with extra icing sugar or whipped cream.

Tomato Goat Cheese Tartlets

A French-inspired fresh cherry tomato tartlet recipe, baked in a buttery spelt-cornmeal crust with fresh goat cheese, thyme and served with balsamic syrup. An excellent way of using up an excess of home grown tomatoes.



Pâte BriséeFilling

  • 200 g Whole grain spelt, ground
  • 50 g Cornmeal
  • 125 g Butter, cut into small pieces
  • 5 g Salt
  • 10 g Sugar
  • 1 Egg
  • 1 tbsp Cold milk

  • 150 g Fresh goat cheese
  • 500 g Cherry tomatoes
  • 4 tsp Breadcrumb
  • Black pepper
  • Fresh thyme
  • 2 tbsp Olive oil


  1. Heap the flour and cornmeal on a counter and make a well. Put in the butter, salt, sugar and egg. Using your fingertips, mix until it has a grainy texture. Add in milk and incorporate gently with your fingertips until the dough begins to hold together. Gently knead 4 or 5 times until smooth. Roll it into a ball and flatten slightly into a thick disk. Wrap in plastic wrap and chill for at least an hour before working with it.
  2. On a lightly floured work surface, roll out the dough to a 2-mm thickness. Using a 18-cm cutter or plate as a guide, cut out 4 circles. Use them to line 4 individual loose-bottom tart pans, 12-cm in diameter and 3-cm deep. Chill for 30 minutes.
  3. Preheat the oven to 190C/375F. Prick the tart shell bases. Line the tart shells with baking parchment and fill with a layer with dried beans to weigh the dough down and prevent it from rising unevenly. Bake for 15 minutes. Lower the oven setting to 170C/340F. Remove the beans and paper and return the pastry shells to the oven for 5 minutes. Remove and leave them on a wire rack and let cool.
  4. Sprinkle each tart shell with one teaspoon of breadcrumb, then divide the fresh goat cheese onto the tart shells, and season with freshly ground black pepper and fresh thyme leaves. Fill in the tomatoes and drizzle the olive oil over. Bake in the center of the hot oven for 20-25 minutes.

Red Currant Banana Tart

When I first saw the ‘blueberry banana tart recipe’ on Roxana’s Home Baking, I knew for sure I had to make it. However, I have gently tweaked the recipe to my convenience and to suit my husbands taste.

The bright colour and tart flavour of these delicate red currants are harmoniously balanced by honey, bananas, almonds, and nutty spelt.





  • 150 g Wholegrain spelt flour
  • 100 g Almonds, ground
  • 50 g Brown sugar
  • 1/3 tsp Salt
  • 120 g Butter, cut into small pieces and slightly softened
  • 1 Egg yolk
  • 2 tbsp Cold water
  • 350 g Fresh red currants
  • 2 Bananas
  • 3 tbsp Honey
  • Blueberries and mint leaves to garnish


  1. Place the flour, ground almonds, brown sugar and salt in a bowl. Make a well and add in butter, egg yolk and cold water. Using your fingertips, mix until it forms a smooth pastry dough. Roll it into a ball, wrap in plastic wrap, and place in the refrigerator to chill for about 30 minutes.
  2. Grease a 11-inch tart pan with a little butter and sprinkle with a little flour. Roll the dough out between two sheets of parchment paper to a circle, 1/8 inch / 3 mm thick, and use to line the prepared tart pan. Cover with a plastic film and chill for 30 minutes.
  3. Preheat the oven to 200C/400F. Fill the crust with red currants, then top with banana slices, and drizzle with honey. Bake for about 30 minutes. Garnish, if desired, with blueberries and mint leaves. Cool slightly before slicing.
