Vegan Gluten Free Matcha Protein Bars

Protein bars are a delicious and convenient way to enjoy a high protein snack. There is no need to buy protein bars when it's far cheaper and more nutritious to make your own. These wholesome protein bars, adapted from desserts with benefits, are made with quality hemp and rice protein, antioxidant-rich green tea powder with nutritious oat and healthy fats.




  1. Line a 20x12-cm plastic box with a large sheet of plastic wrap. Whisk together the almond butter, soya milk, and stevia extract until combined in a mixing bowl.
  2. In another bowl, mix together the hemp protein powder, rice protein powder, oat flour and matcha powder. Slowly add this dry mixture to the almond butter mixture. Mix until the mixture is even, scraping down the sides of the bowl if necessary. It should have a texture like cookie dough.
  3. Spoon the mixture into the prepared box and flatten the surface with a rubber spatula or pastry roller. Cover the box with plastic wrap and refrigerate overnight.
  4. The next day, slice the protein bars and drizzle them liberally with melted white chocolate. Store the rest in a plastic box with a lid in the fridge.

No Bake Amaranth Bars (Vegan, Gluten-free)

These gluten-free vegan no-bake bars, adapted from Rapunzel, are filled with homemade popped amaranth, almonds, cocoa powder, a combination of cocoa and coconut butter, and sweetened with maple syrup and dried cranberries. They are great on the go, super healthy getting your daily fiber and protein.


No Bake Amaranth Bars (Vegan, Gluten-free)

adapted from Rapunzel


  • 85 g Coconut butter, melted
  • 90 g Cocoa butter, melted
  • 150 g Maple syrup
  • 200 g Almond butter
  • 150 g Amaranth, puffed
  • 100 g Dried cranberries
  • 125 g Roasted almonds, ground
  • 2 tbsp Dutch-processed cocoa powder
  • 1 tsp Bourbon Vanilla powder
  • Pinch of salt

  1. Line a 9-inch rectangular pan with parchment paper. Place the coconut butter and cocoa butter in a saucepan. Melt over the low heat.
  2. Mix the melted coconut and cocoa butter together with the rest of ingredients. Spread and press the mixture into the bottom of the prepared pan.
  3. Cover and refrigerate for at least 1 hour. Slice into bars. Store the rest in the airtighter container in the fridge.

Flourless, Sugarfree Peanut Butter Chocolate Cookies

These flourless peanut butter cookies are a dream if you're going gluten-free and sugar-free, especially with the perfect pairing of chocolates. I have used Martha's recipe and replaced caster sugar with pure stevia extract powder and they turned out fantastic.




  • 250 g Smooth peanut butter
  • 1 Large egg, lightly beaten
  • 0,6 g Pure stevia extract (or 180 grams of sugar)
  • 1/2 tsp Baking soda
  • 1/3 tsp Salt
  • 150 g Dark chocolate chips
  • 50 g White chocolate chips, optional
  • 150 g Roasted salted peanuts


  1. Preheat oven to 160C/320F, fan-forced. Line two baking sheets with parchment papers. Set aside.
  2. Cream peanut butter, pure stevia, egg, baking soda and salt i na large mixing bowl until well combined. Stir in chopped chocolates and peanuts. With damp hands, roll level tablespoon of dough into a ball. Place on the prepared baking sheets. Flatten slightly.
  3. Bake for 12-14 minutes until golden and puffed, swapping baking sheets halfway through cooking.

Quinoa Root Vegetables Salad with Curry Vinaigrette

This simple, yet rewarding protein-rich quinoa recipe with ginger-curry vinaigrette, which tastes even better the next day, is a great way to use up any winter vegetables you have in the fridge. It's wonderful as a salad and a side dish with some oven roasted chicken, or as a vegetarian main.

Parsley root, aka Hamburg parsley, rooted parsley, looks deceptively similar to a parsnip, but is less pungent than parsnip and has a faint parsley taste. It has a sweet taste, and is often used in soups, stews, and side dishes in Germany.



SaladGinger Curry Vinaigrette

  • 100 g Quinoa, rinsed, drained
  • 200 ml Water
  • 300 g Root parsley, peeled, cut into inch-cubes
  • 350 g Carrots, peeled, cut into inch-cubes
  • A handful of arugula, roughly chopped
  • 1 tbsp Olive oil
  • 1/2 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • Pinch of nutmeg
  • Salt and freshly ground black peppercorns

  • 2 tbsp Lemon juice
  • 1 tbsp Red wine vinegar
  • 1 tbsp Honey
  • 1 tbsp Madras curry powder
  • 1-inch piece Ginger root, peeled and finely grated
  • 1 clove Garlic, minced
  • Salt and freshly ground black peppercorns


  1. In a bowl, whisk together the lemon juice, vinegar, honey, curry powder, ginger, garlic, salt and pepper. Whisking constantly, add the oil in a slow, steady stream, until the mixture is emulsified and well combined. Taste and adjust the seasoning.
  2. Preheat oven to 200C/400F. Place root parsley, carrots, oil and spices in a bowl. Toss to coat. Transfer to a baking tray lined with baking paper. Roast for about 25 minutes until tender.
  3. Meanwhile, place quinoa and water in a saucepan over high heat. Cover and bring to the boil. Reduce heat to low. Simmer for 10 to 12 minutes or until liquid is absorbed.
  4. Place quinoa in a salad bowl. Add root vegetables, arugula and the dressing. Toss gently to combine.

Gluten-Free Chewy Ginger Molasses Cookies

Chewy, sticky and moist, this gluten free molasses cookie recipe, adapted from bojongourmet, is made with a combination of ground glutinous rice and ground oats. It is super easy to throw together and has a deep, warm flavour to compliment the holiday season.




  • 120 g Rolled oats, ground into flour
  • 125 g Glutinous rice, ground into flour
  • 30 g Mungbean starch
  • 5 g Psyllium husks
  • 1 tsp Baking soda
  • 1 tbsp Ground ginger
  • 1/2 tbsp Ground cinnamon
  • 1/2 tsp Ground allspice

  • 1/4 tsp Ground black pepper
  • 1/4 tsp Fine sea salt
  • 120 g Unsalted butter, melted and kept warm
  • 120 g Molasses
  • 50 g Muscovado sugar
  • 100 g Granulated sugar
  • 1 Large egg
  • 1 tsp Vanilla extract


  1. In a medium bowl, sift together the flours, starch, psyllium, baking soda, spices and salt.
  2. In a large bowl, stir together the butter, molasses, brown sugar, and 50 grams of the granulated sugar. Whisk in the egg and vanilla extract. Stir in the flour mixture and beat with a handheld mixer until well combined. Cover the dough and chill until overnight until firm.
  3. When you're ready to bake, position a rack in the upper third of the oven and preheat to 180C/350F. Line 2 cookie sheets with parchment paper. Place the remaining granulated sugar in a shallow bowl.
  4. Shape the dough into 1-inch balls and roll each ball in the sugar. Place the balls at least 2" apart on the prepared baking sheets.
  5. Bake the cookies, one sheet at a time, until they are puffed and cracked, and the dough between the cracks looks underbaked, 7-10 minutes, rotating the pan after 5 minutes to ensure even baking. Repeat with the second sheet.
  6. Let the cookies cool slightly on the sheet, then transfer the cookies to a cooling rack to cool completely Store the cookies at room temperature in an airtight container for up to 3 days.

Mega Healthy Oat Pearsauce Bread

Moist, dense, flavourful breakfast bread made with organic old-fashioned oats, nuts, seeds, cranberry juice, homemade chai pearsauce and lightly sweetened with honey. It's grain and gluten free, and it's easy to veganize.




  • 150 g Organic rolled oats
  • 140 g Sunflower seeds
  • 85 g Hazelnuts
  • 20 g Ground flax seeds
  • 15 g Psyllium husks
  • 40 g Chia seeds
  • 1 tsp Cinnamon powder
  • 1/4 tsp Salt
  • 40 g Organic honey
  • 320 g Chai pearsauce
  • 185 ml Organic unsweetened cranberry juice


  1. Whisk together the rolled oats, sunflower seeds, hazelnuts, flax seeds, psyllium husks, chia, cinnamon and salt in a bowl.
  2. Stir honey, pearsauce and cranberry juice together in another mixing bowl. Add in dry mixture and stir until all well blended.
  3. Pour into a standard-size loaf pan lined with parchment paper. Cover with a clean kitchen towel and set aside for an hour.
  4. Preheat the oven to 180C/350F. Bake the bread in the middle of the hot oven for about 30 minutes. Remove the bread from the loaf pan and place it in a parchment lined baking tray. Return it to the oven and bake for another 30 minutes. Cool the bread on a wire rack for an hour before slicing.

Grain Free Fudge Pumpkin Brownies

This super moist fudge brownie, adapted from Specialty Cake Creation, is grain-free, dairy-free and taste delicious. I prefer to use honey to sweeten the desserts or baked goods, but if you are a vegan, feel free to replace honey with maple syrup or agave nectar.



BrownieTopping

  • 50 g 85% Dark chocolate
  • 50 g 70% Dark chocolate
  • 25 g Coconut oil
  • 150 g Honey
  • 200 g Pumpkin puree
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 40 g Almond flour
  • 1 tsp Cinnamon powder

  • 40 g Creamy peanut butter
  • 100 g Pumpkin puree
  • 1 tsp Cinnamon powder
  • 30 g Honey


  1. Preheat the oven to 180C/350F. Line a large loaf pan or an 8-inch square pan with baking paper.
  2. Place chocolates, coconut oil and honey in a large bowl set over a pot of simmering water. Stir until chocolate is melted and mixture is smooth. Add in pumpkin puree, egg and vanilla extract. Mix until incorporated.
  3. Whisk together the almond flour and cinnamon powder and add into the chocolate mixture. Spread the batter into the prepared pan and bake for 25 minutes. Remove and cool on a wire rack.
  4. Beat all the ingredients of topping and spread over the cooled brownie. Garnish with some shaved chocolate if desired. Slice and serve.

Gluten Free Buckwheat Jam Bars

These gluten-free jam bars are so good and really easy to make too. I have used homemade pineapple jam for the filling, but you can use whatever your favorite jam or jelly. These bars freeze and travel well.




  • 120 g Buckwheat flour
  • 20 g Cornstarch
  • 1/2 tsp Cinnamon powder
  • 1/2 tsp Ginger powder
  • 1/4 tsp Fine sea salt
  • 1/4 tsp Baking powder
  • 120 g Unsalted butter, at room temperature
  • 50 g Light brown sugar
  • 1 Egg, at room temperature
  • 1 tsp Vanilla extract
  • 40 g Blanched sliced almonds
  • 1 small bottle Pineapple jam


  1. Line a 20x24-cm baking dish with parchment paper. Preheat the oven to 180C/350F.
  2. In a mixing bowl, whisk together the buckwheat flour, cornstarch, cinnamon, ginger, sea salt and baking powder.
  3. Cream butter and sugar with an electric stand or hand mixer until light and fluffy. Beat in egg and vanilla extract until well combined. Gradually stir in flour mixture and beat at slow speed. Stir in the almond slices. Reserve about 1 cup for the topping. Press the remaining dough evenly into the prepared baking pan.
  4. Spread the pineapple jam evenly on the dough. Cover the jam with the reserved dough. Bake for about 25 minutes until lightly golden brown. Cool completely and cut into slices.
